Outback Ain’t Got Nothin’ on Me!!

Do y’all like Outback Steakhouse?!?!  I LOVE IT!!!  My favorite combo is the 8oz. sirloin, medium rare, with a side caesar salad and baked potato…fully loaded.  Mmmmm.  Dang…I’m hungry!  Anyhoo…I also LOVE their baked potato soup.  O.M.G.  SO yum!!  I don’t care what time of year it is…that soup is delish in any kind of weather!!!  I always manage to screw up any kind of potato soup recipe I’ve been given, but y’all…this one.  THIS.ONE.  Holy OMG.  Seriously could NOT be easier.  Our sweet librarian at school shared this recipe with me and I’m SO dang glad she did.  I literally raced to the store after school to buy all the ingredients to whip it up for dinner.  Mr. Spouse said this is his FAVORITE potato soup :)  Outback ain’t got NOTHIN’ on me!!! HA!!!   

EASY CROCKPOT POTATO SOUP

1 30oz. bag of frozen, shredded hash browns {I used Ore Ida}

3 14oz. cans of chicken broth

1 can of cream of chicken soup

1/2 cup onion, chopped

1/4 tsp. ground pepper

1 pkg. cream cheese {don’t use fat free.  It WON’T melt!!!}

As the Pioneer Woman would say, here are the “cast of characters”.

Not too shabby, eh?! 

In a crockpot, combine everything EXCEPT for the cream cheese.  Cook for 6-8 hours on low heat.  About 1 hour before serving, add cream cheese and keep heated until thoroughly melted.  Serve with cheese, sour cream, bacon bits, green onions, or whatever else you think would be good!!

Seriously y’all.  DANG good.  I didn’t have time to make this on the crockpot, so I cooked everything stovetop style.  Probably took about an hour total after everything was said and done.  The hardest part of preparing this meal was ripping open the bag & cans to pour them into the pot.  Yes, friends…it was THAT easy!!!  Mr. Spouse was lovin’ him some potato soup courtesy of wifey and requested that this be added to our dinner “rotation” {which currently consists of taco salad, pasta, and take out}.  Yes please!!!  Promise you’ll love it!!!  By far, one of my faves!!!!

A Souper Collection

So, I guess we've decided to bypass Fall and head right into Winter.


It's November.  NOVEMBER (just in case you didn't get the memo).  I'm still supposed to be sweating it out in 80 degree temps while waiting for the kids in the carpool line.  Instead, I'm cozied up in my sweats sipping on my endless cup of coffee.  I'm not complaining about that, but seriously.  I'd at least like to rewind and hold on to Fall just a smidge longer.

Since our early winter has arrived, we've been indulging in more soups than necessary.  After all, it is our favorite cold weather food.  Mr. Spouse makes a mean pot of chili.  I mean, it's pretty amazing.  So we enjoy that through the weekend when he's home to make it.  During the week, we enjoy our soups like crazy.  Just SO darn comforting!!!  I figured it was time to compile all of our favorites for you because I'm pretty sure you might enjoy some of these, too!!!



It's pretty hard to say which one is our absolute favorite because they're all so good in their own way.



I tend to make a TON of Italian Chicken Soup.  That Pioneer Woman sure does know what she's doing.  This is one amazing soup.  A little elbow grease is involved in the prep, but the juice is worth the squeeze.  And you MUST serve this one with SHAVED parmesan.  Trust me on that one.





Whenever we have company, I always make a couple of batches of  my Chicken Tortilla Soup and there's typically NONE left when it's all said and done.  Absolutely couldn't be easier...a definite crowd pleaser, for sure!!!!




I started making this one last year and realized I worked it into our weekly dinner rotation WAY too often.  Not that that was a bad thing, but it definitely got a fair share of it's play in our kitchen.  It's a crockpot recipe, but I love making it right on the stovetop.




This little version of baked potato soup has been repinned a whole bunch.  A friend I used to teach with gave me this recipe and we've been making it like this ever since.  I love that it calls for hash browns as opposed to potatoes.  I'd much rather dump a bag of those in the crockpot instead of peeling potatoes.  This is definitely a soup for the lazy soul.  




While I know this picture leaves little to be desired, this soup is nothing short of fantastic.  This is the closest I've ever come to recreating La Madeliene's tomato basil soup.  If you're a fan of that one, you'll love this one.  We typically serve it with Italian Grilled cheese and it's the perfect companion.  And personally, I always think this soup is even better the next day!




Again, crummy picture, GREAT soup.  I got this recipe from my parents.  It's their 3-1-1 Minestrone.  They make this one whenever they entertain.  It's enough to feed a crowd and it always gets rave reviews!!!




For all my tequila lovers, this is a soup that will sing to your heart...Hearty Chicken Tequila Soup.  Truth be told, I typically don't use the tequila it calls for, although I'm sure that would help on those nights when I want to get the family to sleep soundly ;)  A girl I used to teach with made this for our team one year and I begged for the recipe after our lunch.  It quickly became a family favorite!!!





Once again, this picture scares the daylights outta me.  YIKES.  I'm now on a mission to remake all of these soups and *try* to picture them in a better light.  SCARY.  Anywho, this chicken & rice soup with avocado is a fast and easy meal.  I adapted one of Rachel Ray's recipes to better fit our family and love how it turned out.  Plus, it's super fast and easy to make!  BONUS!


Speaking of super fast and easy, this spinach tomato tortellini soup is just that.  And tasty, too!  This one didn't last too long.  I was really hoping for leftovers, but no such luck.  I made this when we had company over and I really should've made more.  It didn't last.  If you love cheese filled tortellini, you MUST try this asap!



This SOUPER simple chicken noodle soup isn't just easy...it's fantastically flavorful, too!  There's nothing more comforting than a piping hot bowl of chickn noodle soup...and I don't mean Campbell's version.  Homemade chicken noodle soup reminds me of sick days spent on the couch at mom & dads...watching every episode of Swan's Crossing & Saved by the Bell I could fit in before my siblings returned home from school.  Oh how I wish my boys would give this a try!!!  They need those chicken noodle soup memories to cling to when they get older ;)




This might possibly be the most unappetizing picture in the history of food fauxtography, but the taste makes up for what the picture lacks to convey.  I don't know about y'all, but I do tend to consider chili as a soup...especially when it's not too thick.  I found this recipe for Lime & Black Bean Chili several years ago and couldn't believe how much I liked it!  Even my littlest LOVES it!!!  The secret?!?!  Cilantro!!!




Of course, nothing beats a good ol' bowl of this tried and true classic.  Who doesn't love a warm bowl of taco chili soup?!  'Nuff said!



I heard this version of Olive Garden's Zuppa Toscana is a very close copycat.  I still haven't tried the original version, but I can tell y'all that I'm 12 kinds of crazy about this one. It is SO amazing!  I need to branch out and try more than just pasta when I visit the OG because if the original is anything like the copycat then I know I'm in for a good meal!!!

Meal Planning Monday...Er, TUESDAY

I have been BEYOND behind at updating this little blog. I've been in a little bit of a cooking "funk". Football season is in full swing for Mr. Spouse and his schedule makes cooking {for me} less of a priority. LOTS of late nights!!! But on the nights that I do have him home for dinner, I haven't been great about cooking. Let's just blame it on a new school year. But I'm happy to say that I've got lots of new recipes to try...and share...and I can't wait to get back in the kitchen. Even if I'm only cooking a few nights a week :) {Not so bad, I guess ;)}

Christmas is Cheesy

SO hope that didn’t offend any of my Christmas lovin’ friends :)  Of course, you know I don’t really feel that way!  I LOVE all the Christmas fun & festivities!  I’m especially a fan of Christmas Even dinner :)  For the last 6 years, I’ve celebrated with Mr. Spouse’s family up north and every Christmas Eve we dine on a huge buffet of the most delicious appetizers and finger foods.  Well, this year we spent Christmas Eve all by ourselves and I refused to order take-out {even though that’s what I REALLY wanted to do :)}  Instead I decided to whip up a meal I knew we’d be happy to say, “We eat that EVERY Christmas Eve!!”  This is one of Mr. Spouse’s FAVORITE dishes.  I still think his mom is the master at making these, but I gotta say that my recreation wasn’t too far off.  I’ll put it this way…Mr. Spouse licked his plate clean and then went back for more :) 

RITA’S CHEESY MASHED POTATOES

4-5 large potatoes

1 {8 oz.} pkg. cream cheese, softened

1 pkg. Lipton Onion Soup & Dip Mix {Recipe Secrets}

1 1/2-2 cups shredded cheddar cheese

Milk, to taste

Peel potatoes and boil.  Remove when potatoes are super soft and ready to be mashed.  I like to cut my potatoes up in small chunks so they cook faster when they’re boiling.  Transfer to a large bowl, mash, and add cream cheese & onion soup mix.

Mix with blender until well blended.  The consistency will be pretty thick.  If that’s how you like your potatoes, stop there!  We like ‘em a little smoother, so I added some milk and mixed.  Then I added a little more and mixed again.  When they were finally a consistency that made me happy, I stopped :)

Transfer potatoes to a 2qt. baking dish and add cheese.  Mix until well blended and cook on 350 for 25-30 minutes or until cheese is bubbly.

Like I said, this is one of Mr. Spouses favorite dishes. I usually make these for him on his birthday because he likes ‘em so dang much.  I LOVE potatoes and this variation makes my potato lovin’ heart swell.

Some Like It Hot

{Tap, tap, tap...is this thing on????}

For the 5 people who still read this blog, I decided to take a little break from blogging last week.  Something I think is absolutely necessary every now and again.

We spent some serious QT with some of our favorite friends in Dallas a couple of weekends ago and had the best time crossing some things off our family fun bucket list.  Steel City Pops, post-baseball fun at The Lot, drinks at the Truck Yard, dinner at Remedy, Moscow Mules at HG Sply Co., and more.  I even snuck in a trip to Snuffer's for cheese fries and lunch with one of my favorites.  It was the perfect visit "back home".

This girl is my best friend...my soul sister...my chicken soup for the soul.  When these mugs showed up on my IG feed a few weeks ago, I knew I had to get one for her!  We enjoyed our weekend coffee from our newest pantry accessories and they are just PERFECT!!!!



We had fun spoiling our teachers during Teacher Appreciation week last week. We genuinely feel like we won the teacher lottery.  My boys' teachers are nothing short of amazing.  We really love surprising them with treats all year long...mostly in the form of Sonic drinks every week...but there's just something special about Teacher Appreciation week, y'know?!  Here was one of our little surprises...

Brown paper packages tied up with strings each one holding a few of their favorite things...magazines, candy, snacks, and drinks.  I just used a sharpie to personalize the bags.  I had the teachers fill out THIS QUESTIONNAIRE at the beginning of the year so I could treat them throughout the year.  I sent them a little email the week before teacher appreciation week to see if they wanted to make any changes to the questionnaire before the week started :)  Goodness we love them so!!!


Speaking of love, yesterday we celebrated Mother's Day.  My boys were quick to run in my bedroom and wake me up yesterday morning...they were SO excited to show me what they made for me!!!  I die!  These are my most favorite kind of gifts...their own sweet little words straight from the heart...completely unfiltered and honest.  

Let me just tell you I haven't been to the mall but maybe 4 times this entire year and I haven't taken the boys with me on any of those trips!!!!  HA!!!  Cracks me up that he would remember Forever 21 from those times I'd drag them with me.  It clearly made an impression and I can tell you it wasn't his favorite memory :)  And really, I must be doing something right because apparently I'm as fun as Chuck E. Cheese.  Actually, I take that back.  Maybe I'm doing it all wrong?!  That place is torture!!!!  HA!!!!
Seriously though...I love that they both talked about snuggles and kisses.  It's the little things that mean the most!!!

Can I also take a second to tell you about this man???

He has the biggest heart.  His gift to me this year wasn't one that came from a store.  It was so much more and then some.  I don't want to get into it because it's really not my story to tell, but I will say that his thoughtfulness brought me...and my boys...to tears.  Moments like these really put life in perspective. It's a Mother's Day I'll never forget and one that has started a new tradition.  I'm so proud to do life with this man.  


I gave all the ladies this framed bible verse.  It's been a goal of mine to learn hand lettering and how to do it on my own.  It's always a work in progress, but I love the practice.  It's so very cathartic.  


And in other news, something tells me we'll need to stock up on sidewalk chalk in the weeks to come.  This past Friday was brought to us by The Cure....


...and CSI, too.  My driveway looked like a mini crime scene.  



Now let me leave you with one of my most favorite recipes!!!  It's been around forever.  My most favorite way to eat chicken salad.  This is a great little meal to make for company or take to family gatherings.  There's never a bite left in the bowl when it's all said and done.  


HOT CHICKEN SALAD PITAS
2 cups chicken breast meat, cubed OR 1 rotisserie chicken, shredded
1 cup diced celery
1/2 tsp. Cajun seasoning (Tony Chachere's is a house favorite)
1/2 tsp. pepper
2 tbsp. fresh lemon juice
1 cup mayonnaise
1 cup shredded colby & monterrey jack cheese
Potato Chips
Pita Pockets

Preheat oven to 350 & spray an 8x8 baking dish with non-stick cooking spray.  Meanwhile, cut your celery & shred/cube your chicken.  Add both to a mixing bowl.

Toss in the mayonnaise, cajun seasoning, pepper, cheese, and lemon juice.

Mix well until evenly coated.  Transfer mixture to an 8x8 baking dish.

Top with crushed potato chips.  The original recipe calls for 2/3 cup of crushed chips, but you can use more/less depending on your preference.  Pretty sure we used more!

Bake for 20 minutes, or until bubbly.  Remove from oven & serve HOT! 
Of course, you can serve this just as it is OR you can pop the mixture into a pita pocket and call it a day.  That's my personal favorite.  We love our hot chicken salad pitas around here!!!
Just try it and you'll see why!!!

Rocky Mountain High

When I found out that Adam had a bye-week mid-October I decided I needed to steal him away for a quick weekend out of town.  My original thought was to take him to the Bourbon Trails in KY, but the flights were sparse and ridiculously expensive (I'm a last minute planner).  PLUS, we really wanted more than 48 hours to explore the distilleries.  Next thought was traveling somewhere where we'd have a chance at seeing what a real Fall looks like.  Brown and crunchy here in Texas aren't exactly the adjectives I'd use to describe Fall.  So, we went back to the drawing board and added a few options to the list...somewhere in Maine or Vermont OR Boston.  The flights out that way were a lot less expensive (thank you, Southwest), but the flight times and connecting flights made me cross them off the list with a quickness.  I didn't want to spend more time traveling than enjoying our surroundings.

Colorado has been on my bucket list since forever and when Adam brought it up, we were sold.  Southwest was running an amazing deal on flights to Denver and we couldn't have reserved our seats at a more perfect time.  Our original plan was to stay in Denver on Friday and then drive to Estes Park on Saturday, hike through Rocky Mountain National Park, and then tour and stay at The Stanley Hotel (remember The Shining?! #redrum).  Sadly, the hotel was booked through November and Adam was convinced I'd be in love with Breckenridge a lot more, so that's where we headed instead.  

It was a whirlwind 48 hours, but I think I'm finally coming down off my Rocky Mountain High
 (John Denver, anyone?!?!)  Colorado...Breckenridge, specifically...has just shot up to the top of my list of favorite U.S. cities/states.  Swoon.

We arrived at the Denver airport mid-afternoon on Friday and drove to downtown Denver.  Adam loves Colorado and wanted me to see downtown before heading to Breckenridge.  We were starving by the time we got settled in,  so we walked to the little mall area downtown and found this great burger bar, 5280 (I highly recommend!!!), where we stuffed ourselves silly with fries, burgers, and a few of their handcrafted beers!! (I loved the Autumn Ale!)

What to eat:

The Baja Colorado Burger (not ashamed to admit there wasn't a bite left on my plate)

Our personal favorite?!  The music!!!  They were playing the best 80's music and added so much to the already amazing atmosphere.  


.  We walked down to Larimar Square to shop around, grab a nightcap, and admire the foliage after burgers.  Seriously picturesque. I felt like I was in a movie :)  Larimar Square reminded me of the downtown area in Franklin, TN.  It was stunning!



Several people suggested we try Snooze for breakfast while in Denver and we were told they'd have crazy long lines so we should get there early.  We went to bed early and set our clocks for 6 am.  We like our food and we don't want to wait to eat if at all possible ;)  Luckily we got there at the perfect time...right around 7:30...and there was no wait!  This was, hands down, the best breakfast!  
We absolutely loved the restaurant itself...really cute and had a great little diner feel to it.  The menu was pretty big, so I was glad to have suggestions on what to eat.  Several people told me to go for the Flight of Pancakes and ohmiword...that did NOT disappoint!!!


If you ever find yourself at a Snooze eatery (we're getting one in Houston!!!!!), here are our suggestions...

What to Eat:
If you like something sweet....
The Flight of Pancakes (a pancake sampler, if you will) 
I went with the pineapple upside down pancake (my favorite of all three...real bits of pineapple in the batter topped with this ridiculous brown sugar butter), the cinnamon roll pancake (equally as delicious), and the blueberry danish pancake (with a surprise lemon creme filling).  

If you're more into savory....
Chilaquiles Benedict with hash browns (the best hash browns I've ever had)

What to drink:
The Cosmonaut (but get it on ice!!!  Best coffee cocktail EVER
The Jam Session Mimosa

I was excited to get an early start to our day. The restaurant started to fill-up by about 8:30 and we started our early morning road trip to Breckenridge.  I really wanted to drive through the Boreas Pass, so Adam mapped it all out and decided we'd head to Breck & through the Boreas Pass through a little town called Como. 

It's the tiniest little town.


Before arriving in Como, we pulled over to test out the selfie stick.   Our favorite travel accessory :)  Finding this stream of water at the base of one of the mountains was the perfect start to our day.  



Let me just tell you right now that driving the Boreas Pass starting through Como will have you on the edge of your seat.  Talk about white knuckle driving.  I'm pretty sure I didn't breathe for the first 10 miles of that ascent.  The driving path was so narrow that if another car would've approached us coming the opposite way I seriously think we would've fallen off the side of the mountain.  Of course there were no guard rails and I was convinced that the right gust of wind would have us careening off the steep sides.  All that to be said, it was totally worth it.  Here we were once we got through the most narrow area...YAY!!!  We're alive!!!


Can you see the mirror in the pic on the right??  And then the gravel below?  Where it stops is the edge and it's straight down.  TOO close for comfort, LOL!!!  I kept leaning toward Adam in driver seat as if that would help the car stay put :)


Each time we saw a place to pull over and park we'd get out to admire the beauty that is Colorado.  The views were so breathtaking.  I couldn't possibly articulate how stunning it is...this is just something you'd have to see for yourself!!!  Pictures clearly don't do it justice.  


We couldn't have been more excited to make it to the summit.  A nice little relief to all that white knuckle driving.  The Boreas Pass was once used as a narrow-gauge railroad running from Breckenridge to Como and at the top of the pass you'll find the historic Section House, cabins, and a boxcar (the only things left remaining of the original Boreas Station).  The cabins were locked up, but apparently they're used by cross country skiers during the winter.  This is also the location of the Continental Divide!!  Woo hoo!  And the altitude is no joke.  I was out of breath just hopping out of the car :)


We spent the most time walking around here at the summit.  I wanted to check out the cabins and Adam wanted to say he "hiked" to the top.  He's a mess.  We could've stayed up there all afternoon just exploring.  It was such an amazing experience!

I think we were just a couple weeks past seeing the flood of Fall colors on the Pass, but we did happen to see these gorgeous trees along the descent into Breckenridge. 


I mean.  For real.  Could this be anymore beautiful ?!?!!? (said in my best Chandler Bing voice).
The Boreas Pass was my favorite part of our trip.  Scary driving and all.  The views and scenery are unparallelled.  


All that driving anxiety helped us to work up quite an appetite, so we headed to Main Street and stopped to eat at Giampietro.  Someone suggested eating here in one of the comments, so when we spotted it we had to try it out. And pizza sounded SO good!!!  The perfect meal!


What to Eat:
Start with the Cheese Bread (the sauce is outstanding) and top it all off with pizza.  ANY pizza will do because the base is amazing.  Wash it all down with a Peroni :)


After lunch we walked around Main Street and I'm pretty sure I teared up.  Y'all.  If you've never been to Breckenridge, GO.  It is just beautiful.  The downtown area is so quaint and charming.  Adam knows me so well...this is just my kind of town!  But even more amazing than I could have imagined.  We went in and out of the shops lining Main Street and then ducked into this great little bar (Apres) when it started to rain. Not a bad way to wait it out :)  This was a great place for libations.  The setup was perfect and there were lots of board games available to play, too.  And tons of handcrafted beer on tap. And again with the music.  The best!!  60's & 70's classic rock which, in my opinion, is the perfect genre of mountain music.  We loved it there!


What to drink:
We recommend Death of a Gentleman :)


After the rain passed, we headed to the park area.  I was dying to see the blue trees that were filling up my IG feed!!


Fun fact.  The trees are painted blue to bring awareness to global deforestation.  You can read more about it here.  They were just gorgeous! 

These COLORS!!!!  The most breathtaking scenery!  I felt like I was walking through a movie.  



After walking around for a while longer, we headed to the hotel to check-in.  We stayed at One Ski Hill Place and I HIGHLY recommend it!!!!



  Our room was amazing.




And this was our view right off our huge balcony/patio.  I can only image how beautiful it is when it's all covered in snow!  It was a little chilly, so I grabbed a blanket to sit on the balcony and listen to some music before dinner.  



When it was time to head out, we had the shuttle take us to Ember.  This was another place recommended and it was delicious :)  We're adventurous eaters, so we like to try things that we wouldn't be able to find back home and the menu seemed to fit that bill.  This is definitely not a place I'd take kids.  While the food was really good, I don't think we'd go back....not because of the food (because it was great), but there are several other places we want to try!!  They have a menu that changes seasonally, so I would be interested to see what they offer during other parts of the year.  For Saturday night's dinner we started with an Indian take on tomato & spinach soup (pretty tasty) and I had the buffalo tenderloin.  It was served on top of a bed of cornbread stuffing (amazing) with a side of swiss chard (not my favorite, but that's not because of the way it was cooked.  I've never been a huge fan!).  Adam had the New York Strip with sweet potato and quinoa salad (really good!) and a side of brussel sprouts.  There wasn't a bite left on his plate if that tells you anything.  
Overall, I'd definitely recommend this place if you're looking for something quiet and quaint!



We walked to the Briar Rose Saloon for dessert and cocktails. We sat at the bar and loved the atmosphere. And the music!  SO great!  And our bartender was awesome.



What to eat:
Dessert - the cheesecake (one of the best I've ever had. Light and airy. Perfection on a plate)
Pair your dessert with a coffee cocktail.  I recommend the signature Briar Rose Coffee.


We called it a night after dessert and headed back to the hotel to watch a movie by the fire.  Not a bad way to end the day!

We slept in Sunday morning, packed up, and checked out.  We drove back to Main Street for breakfast.  We didn't want anything too filling, so we hopped into the cutest little Starbuck's for our overpriced Caramel Machhiatos and then we walked around one last time.  Several people suggested Crepes a La Cart and when we stumbled upon it on our walk I had to try one. There was hardly a line (which I heard is extremely rare), and we still waited about 20 minutes for my crepe...and it was worth every minute. Adam decided to pass, but I'm sure he regretted it when he saw mine :)  


What to get:
I'm a fan of all things apple, so I would suggest he German Apple Strudel crepe (but there are a million different choices, both sweet and savory.)  NO WORDS.  
Just amazing.  

We took one last walk past the Riverwalk Center and started the drive back to Denver to head home. SO sad to leave so quickly, but it was an amazing 48 hours of fun!  I can't wait to go back!  Only next time, we'll bring the boys :)  

There are a lot of places on my bucket list that I want to visit, but like I told Adam...I'd much rather come back to Colorado before I cross anything else off that list.  It was really that breathtaking.  I've been to Europe a handful of times thanks to a grandma who believed in learning through travel.  Italy will always be a favorite of mine and out of all the places she took me I'd love to go back there the most, but if I'm being really honest, I don't see myself traveling abroad again any time soon.  There are SO many beautiful places in the U.S. that I haven't even seen yet!  And I want to explore more of Colorado.  In fact, I really want to move there :)  

Such a perfect 48 hours!!!  Can't wait to go back!
