Meal Planning Monday

Okay, so I haven't been very good about formulating a plan for my weekly meals.  Mr. Spouse has had absolutely crazy schedules the last few weeks, so my cooking in the kitchen has been kept at a minimum...we're talkin' like, 2 days a week.  NOT that I'm complaining, but ohmiword.  It doesn't give me much motivation to make a plan.  Now that this week's schedule is a little bit more *normal*, and I actually went grocery shopping yesterday {gasp!!!}, I decided it was time for a menu :)  You'll see a lot of low-cal, low-fat recipes this week.  Mr. Spouse has been requesting this for quite some time, so we'll be eating *lighter* for the next few weeks.  It's time to make a little more room in our Thanksgiving pants :) 

Monday:  Chicken Caprese & Roasted Green Beans

Tuesday:  Crock Pot Black Bean Chili with Lime & Cilantro

Wednesday:  Tomato & Mozzarella Fish Bake & Roasted Asparagus

ThursdayPeperoncini Chopped Salad with Red Bell Pepper, Feta, & Grilled Chicken

Friday:  This is the first Friday night Mr. Spouse will be home since August, so I think we'll be going out to eat!

Weekend BreakfastRoasted Green Bell Pepper and Tomato Breakfast Casserole with Feta & Oregano

Saturday dinner:  Out to eat

Sunday dinner: Out to eat
