The Perks of Being a Teacher

There are some serious perks associated with being a teacher. The obvious would be holidays, long weekends, and SUMMER! But the other perk is the teacher’s lounge. Yes…you read that right. There are always some kind of goodies in there and teachers are NOT ones to turn down food and sweets! If it’s there…I’m eatin’ it! HA! SO, when I found this recipe over the summer, I was DYING to make it…but I sure didn’t want it sittin’ around the house because I knew that I’d devour these in NO time. Now that the school year is well underway, I knew this was the perfect time to try out the recipe, keep a few of these cookies at home, and take the rest to the teacher’s lounge!!! They were gone in NO time!!!

HOMEMADE OREO COOKIES

2 boxes Devils Food Cake Mix {I used Pillsbury}

4 eggs

1 tsp. vanilla

1 1/2 cups shortening {Crisco}

FILLING

1 {8 oz.} pkg cream cheese

2 cups powdered sugar

1 tsp. vanilla

1 stick of butter, softened

For the cookies, mix together all ingredients. DON’T follow the directions on the cake mix. All you’ll need for this part is what you see below.

This will make a pretty thick batter, so get ready to get your hands a little dirty to make sure it’s all mixed well :) Now…grease up a cookie sheet and drop the batter onto it by the teaspoonful…unless you want a BIGGER cookie. But seriously, these are plenty big enough. These cookies are just PERFECT as a little bite size :)

Bake at 375 for 8 minutes, remove, and cool on wire racks. Be ready because this recipe makes a TON of cookies, so you’ll repeat this process SEVERAL times :)

While the cookies are baking, mix together the cream cheese, butter, vanilla, and powdered sugar. This is the filling and O.M.G is it TO-DIE-FOR. Let the cookies cool for about 15-20 minutes and start covering the bottom of a cookie with some of the filling. Then top the filling with another cookie and VOILA! The most sinfully delicious bite-sized cookie your taste buds will ever know. A little bit of heaven in EVERY.BITE.

homemadeoreos4Seriously, is your mouth not watering or what?! Mine is! I was SO thankful that I had somewhere to take these because they wouldn’t stand a chance in my house. This recipe makes such a big batch that I had enough to send to work with Mr. Spouse, too! And his kids LOVED them!!!! I know they scored rave reviews in the teacher’s lounge at my school :) And seriously, I can’t wait to make them again!!!! SO YUM!!!!! Put this on the top of your list of things to bake! You’ll be SO HAPPY you did!!! Just make sure you have someone…or lots of someones…to share them with ;)

  1. Oh... my... gosh! I just baked these cookies! They are seriously heavenly! Did you refrigerate them afterward because of the filling? I'm pondering how to store them at the moment! Thanks for sharing! YUM!
