A College Meal With A Grown-Up Twist

Please tell me that  your main source of calories in college was Ramen?!  I LIVED off that stuff.  I’m bummed I never thought to use my favorite meal in a salad.  Genius.  It would’ve been too expensive for me to make, but now that I’m all grown up, I can make this and think about college any time I want!  This might be the best salad EVER.  I’m just sayin’…

CRUNCHY STRAWBERRY & ROMAINE SALAD

Romaine lettuce {I used three hearts of romaine, chopped}

1/2 cup green onions, chopped

2 cups strawberries, sliced or chopped in bite-size chunks

1 pkg. Ramen noodles {discard seasoning packet}

1/4 cup butter

1 cup chopped walnuts or almonds {optional}

DRESSING:

1/4 cup Extra Virgin Olive Oil

1/4 cup sugar

2 tbsp. red wine vinegar

1/2 tsp soy sauce

Saute the Ramen & walnuts/almonds in the butter for about 8-10 minutes or until golden brown.  As you can see, I didn’t add the walnuts.  I forgot to pick some up at the store, but really…I’m not a fan :)

Meanwhile, chop up  your strawberries & green onions.

In a big salad bowl, add the strawberries & onions to the chopped romaine.

When the Ramen is golden brown and ready, add it to the salad.

Now, make the dressing.

Start out by adding the olive oil to a little mixing bowl, and then pour in the sugar, soy sauce, & red wine vinegar.

Whisk until blended.

Add to the salad and toss!

Does that not look amazing?!?!

IT IS!!!! 

And it’s even better with a little smoked pork shoulder & french bread.  I’m just sayin’ ;)
