Breakfast On The Fly

My little man LOVES blueberry muffins.  He came downstairs SCREAMING for "boo nuffins!!!!" the other morning, but to his  {& my} dismay, we were out!!  Knowing he had a craving for muffins and that I hadn't been to the grocery store in TOO LONG, I quick googled a made-from-scratch recipe for muffins.  Landon would LIVE on chocolate {such a momma’s boy!} if we let him, so I knew that chocolate chip muffins were the next best thing to blueberry.  For a first time recipe I have to say that these little "nuffins" were pretty tasty.  Little Man snacked on them ALL.DAY.  We'll definitely make these for breakfast on the fly again!!

CHOCOLATE CHIP MUFFINS

2 cups all-purpose flour

1/3 cup light-brown sugar

1/3 cup sugar

2 teaspoon baking powder

1/2 teaspoon salt

2/3 cup milk

1/2 cup butter -- melted and cooled

2 eggs - beaten

1 teaspoon vanilla

1 package (12 oz) chocolate chips {I used the mini chocolate chips}

Preheat oven to 400 and spray your muffin tin with PAM. 

You’ll need a cute little {very serious} chef-in-training to help you with this breakfast.

First mix together your flour, sugars, baking powder, & salt.

In a separate bowl, mix together milk, eggs, butter, & vanilla until blended.  Add milk mixture to the flour combo & stir just to combine.

Stir in chocolate chips.Chocolate Chip Muffins5

Now ask your chef-in-training to make sure there’s enough chocolate chips in the mix.  After all, he’s the expert.

Spoon batter into muffin cups.  You should have enough batter for 12 LARGE muffins.

Bake for 15-20 minutes.  Remove & ENJOY!!!  This was the best breakfast on the fly we’ve ever had!
