Mouth Watering Mornings

I’ve never considered myself much of a breakfast person.  However, when I was living in the “city”, I’d stop by Starbuck’s almost every morning and grab myself a tall skinny latte and a cup of their *perfect* oatmeal.  Breakfast of champions.  But I digress.  I don’t have much time to cook a big meal in the mornings in between getting myself and two little boys ready for school every day, but when the weekends roll around, this little number is the first on my list of things to make.  We got a waffle maker about a year ago and I honestly thought we’d never use it.  That little appliance gets more play than anything else in this house!  My husband would have to agree ;)  We absolutely LOVE making waffles from scratch and this, hands down, is my favorite {simple} waffle recipe!!!!  Sorry Starbuck’s, but I’d choose these waffles over your oatmeal ANY day of the week ;)

MOUTH WATERING WAFFLES

makes 6 servings

2 eggs

2 cups all purpose flour

1 & 3/4 cups of milk

1/2 cup vegetable oil

1 tbsp. white sugar

4 tsp. baking powder

1/4 tsp. salt

1/2 tsp. vanilla

You probably have all of these ingredients on hand already.  Now all’s you need is a waffle iron!  I HIGHLY recommend getting your hands on one ASAP!!!  Pinterest even told me you can make COOKIES in these things?!??!!  Moving on…

Beat the eggs in a large bowl until fluffy.  Toss in the flour, milk, vegetable oil, sugar, baking powder, salt, and vanilla and beat until the mixture is smooth.  Make sure your waffle iron is preheated and then go to town. Cook until golden brown and serve warm.  Our waffle iron makes a little sound when our waffles are ready and PTL for that!  I know I’d burn about 20 before I actually got a good one out of the batch :)

This is, by far, my favorite way to eat waffles.  Forget the syrup.  It’s just TOO much sometimes, y’know?!  Give me a good ol’ fashioned can of Redi Whip and some fresh strawberries and say goodbye because it’s all over.  I seriously can’t get it in my mouth fast enough.

These waffles are pretty light and fluffy, so I like adding the strawberries and whipped cream to keep with the theme.  Plus, it tastes amazing as all get out.  My boys like to eat these with butter and syrup.  They’re pretty amazing that way, too.  Whichever way you serve it, you’re bound to LOVE them.  They just sorta melt in your mouth.  And right about now, my mouth is watering just looking at these pictures.  I think I’ll wake up early tomorrow just so I can have a taste!!!!

On second thought, I think I’ll sleep in.  I’m really not a fan of alarm clocks.  I’ll save this for dinner instead ;)
