You Can’t Eat Just One

I’m always on the lookout for new snack ideas.  I’m usually a veggie/yogurt/cheese stick/turkey/popcorn kinda snack gal, but I *might* enjoy the occasional indulgence…especially on the weekends.  This is one of my favorite new snacks.  It’s absolutely IMPOSSIBLE to eat just one, so expect a little *snack* to turn into a feast.  Thank the Lord for simple indulgences because this snack is just that!

RANCH PEPPER CRACKERS


1 & 1/4 cups canola oil

1 packet dry ranch dressing mix

2-3 tbsp. red pepper flakes

3-4 sleeves of Saltine crackers

In a large bowl, mix together the oil, ranch, and red pepper.  Toss in the crackers to coat.  I mixed ‘em around a bit, but I wanted them to be evenly coated, so I tossed ‘em in a large Ziplock baggie and got to work.

Remove the crackers from the baggie and place them on a large baking sheet.  Bake at 250 for about 15-20 minutes and be sure to stir them around halfway through cooking.  Remove from oven and just *try* to keep from eating the entire pan.  I dare you ;)

  1. These sound delicious! I've had something similar with those little oyster crackers (for soup) and they are bite size!

  3. Oh...and I meant to recommend adding 1/2 tsp. of garlic powder in the mix. YUM YUM!

  5. I'm making these today! I might try with the mini saltines though. I hope one box is enough and doesn't mess up the ratio

  6. We call these "redneck crackers" and love them. However, we never bake them. I put them in my big tuperware like container and then just tip in over and roll it around until they are evenly coated. Everywhere I take these people want the recipe and then can't believe how easy it is. Not baking it would take out huge step :)Just a thought...Love your blog! I am a teacher and a mother of 3 girls so this blog reminds me a lot of me :)
