Happiness in a Cup

I’ve figured out that happiness comes from a cup.  A S’mores cup.  Ohmiword.  Of course, I found this little recipe via Pinterest and couldn’t wait to try it out.  We just had our little Ugly Sweater Christmas party and I knew this was the perfect little sweet treat to add to the menu.  I pretty much downed the entire first batch all by myself, but since these were SO dang easy to make, whippin’ up another batch didn’t take any time at all.  They were a HIT!  Yes, happiness definitely comes in a {s’mores} cup!

S’MORES CUPS

1 sleeve graham crackers

1/4 cup powdered sugar

6 tbsp. butter, melted

4 Hershey’s Milk Chocolate bars

large marshmallows, cut crosswise

First you’ll need to make the graham cracker cups.  So, start by finely crushing your graham crackers.  My food processor would’ve done the job nicely, but it was dirty so I went ahead and threw ‘em in a baggie, closed it up, and took a rolling pin to it.  Perfect.

Now add the crumbs to a mixing bowl and toss in the butter and powdered sugar.  Mix well.

Using a tablespoon, take the crumb mixture and scoop it into each cup of your mini muffin pan.  Using the back of your tablespoon, press a little “scoop” into each cup so that the crust isn’t flat all the way across.

Bake these at 350 for about 4-5 minutes.  Remove from oven and place 1 little square of chocoloate {from the Hershey’s bar} into the center of each cup.  Top that with half of a large marshmallow.  You’ll need to cut each marshmallow in half {crosswise}.  Return to oven and bake for an additional 3-4 minutes.

Remove from the oven and let cool for about 15 minutes on wire racks.  Whatever you do, don’t remove them from the pan right away.  They’ll need about 5 minutes to set first.  If you remove them too quickly, they’ll crumble right in front of you! {Sadly, I speak from experience}.  While you’re waiting for the cups to cool, melt 2 of the chocolate bars in the microwave until bubbly…just make sure you don’t burn it!  There’s nothing worse than the smell of burnt chocolate {well, maybe popcorn}.  Once the cups are cooled, dip the tops in the melted chocolate and set aside to cool.

Ohmiword, y’all.  These were SO dang good!!  I mean seriously…who doesn’t love a S’more?!  And a S’Mores that doesn’t get your fingers all sticky is even that much better!!!  Like I said before, these little sweet treats were a HUE hit!!!!  I made about 4 dozen and they were all gone in NO time!  You’ll see why when you try ‘em for yourself!!!  YUM!
