Mexican Comfort Food

I love Mexican food.  If you’ve been reading this blog for any length of time, I’m sure that comes as NO surprise :)  Crazy enough, Mexican isn’t my first choice when dining out.  I prefer Italian or seafood.  But I LOVE cooking Mexican dishes at home…not only because these dishes are pretty cheap and easy to make, but they taste yum as all get out, too!  This little number is no exception.  My mom sent me this recipe after she tested it out and got a thumbs up from my Dad.  That speaks VOLUMES!  After trying this myself, I decided that this is like a little dish of {Mexican} comfort food….SO.DANG.GOOD!!!!! 

CHICKEN-CHILI CRESCENT BAKE

Rotisserie chicken, shredded

1 can Bush’s Grillin’ Beans {Fiesta Black Beans}

1 can Rotel {we used HOT!}

2 tbsp. taco seasoning

1-2 cups shredded cheese {we used monterrey jack & colby}

1 can crescent seamless dough sheets

The starting lineup…

Mix together chicken, beans, Rotel, and taco seasoning in a large saucepan over medium-high heat.  Cook for about 5 minutes or until heated through.

Transfer mixture to a 9x13 baking dish.  Cover with cheese and top with the crescent seamless dough sheet.

Cook at 375 for about 18-25 minutes or until crescent topping is golden brown.  Remove from oven and cool for about 10 minutes.

Now serve it up and prepare to be amazed.

SO flippin’ good!!!  This is why I think my mom is such a domestic wonder in the kitchen.  She can turn an ordinary recipe into something TO.DIE.FOR!!!!  This is one of our new faves!  Mr. Spouse requested that this become a regular part of our dinner rotation.  I wish there were more days in the week because I feel like he’s been saying that a lot lately!!  At least he’s not requesting take out, or like in our early days, CEREAL.  Ouch.  Definitely add this to your list of things to try.  You’ll be SO happy you did!!!!

  7. I made this this weekend and it was delicious!! I added frozen corn and chopped bell pepper to the chicken mix. I couldn't find those seamless sheets, so I just used regular crescent rolls and it worked just fine!! We had mojitos with dinner and it was yummy! Thanks for sharing!
