Not Gonna Lie…

I’m not gonna  lie…I was nervous as heck to try out this recipe.  I mean, in theory, it sounded pretty good, but you never know.  I’m never one to shy away from new recipes…unless they reuire some random ingredients or seem overly complicated.  After all, I like quick & easy!  And since this recipe seemed way too easy to pass up, I had to try it.  I was PLEASANTLY surprised!!  This will definitely be hittin’ the dinner table again…SOON!!!  SOOOO good!!!

SAUSAGE ‘N’ TATER CASSEROLE

1 pkg hot sausage {I used Jimmy Dean}

1 onion, chopped

4 large garlic cloves, pressed

1 can cream of onion soup

1 can cheddar cheese soup

1 can fiesta nacho cheese soup

1/4 tsp. crushed red pepper

1 pkg. tater tots {32 oz.}, partially thawed

 

Combine sausage, garlic, and onion in a large skillet and cook on medium high heat.  Cook until meat is nice and crumbly.

Once meat is browned, stir in the soups and crushed red pepper.

While the sausage & soup mixture is cooking, line the bottom of a 2 qt. casserole dish with half of the tater tots.

Spread the sausage & soup mix evenly over the layer of tots.

Arrange another layer of tots on top of the sausage & soup mix.

Bake according to the directions on the tater tot package.  I think I baked ours at 425 for 20 minutes.  Just long enough for the tots to cook & brown :) Mmmmmmm….

If you’re thinkin’ this reminds you of a traditional tater tot casserole, you’re right…except this one is SOOOO much better!!  SO much more flavor & creaminess and it packs a little punch!!  We like things hot & spicy around here, so this was right up our alley ;)  Well, it wasn’t that hot & spicy, but it definitely had a kick!  If you don’t want the kick, leave out the red pepper and use mild sausage instead of hot.  I promise you’ll LOVE it!!!!!

  5. I just made this tonight & it is YUMMY!! I used ground beef instead of sausage though & left out the garlic cloves & just sprinkled some garlic powder instead, & I left out the red pepper. But the soup & hamburger mix together is freaking AMAZING!! I could eat it just like that too! lol
