Okay…so I don’t remember my Grandma{s} making anything like this growing up, but it definitely reminds me of something a grandma would whip up. It’s SUCH a comfort food it’s ridiculous. I won’t begin to tell you how many servings I helped myself to, nor will I share the quickness in which it was devoured. This is the PERFECT makes-me-feel-so-cozy meal and we’ll DEFINITELY be eating this again…SOON!!
CREAMY CHICKEN & BROCCOLI CASSEROLE
3 chicken breasts, cooked & shredded
2 cans of cream of chicken soup
1 cup of mayo
1 cup shredded cheddar cheese
1 cup colby & monterrey jack cheese
1 bag frozen broccoli,thawed and chopped
salt & pepper to taste
Cook chicken & shred. Meanwhile, chop the broccoli. Okay…so we used frozen broccoli, and while I know they make the frozen chopped broccoli, the store was OUT. SO, I chopped my own…and it didn’t take any time.
Now, mix all ingredients together.
Transfer mixture to a lightly greased 2 qt. casserole dish & heat oven to 375.
Cook for 30 minutes or until bubbly.
And the most important part…SERVE WITH RICE!!!! Omg…SO AMAZING!!!!!!! This is definitely a meal where the leftovers are *almost* better!! These pictures are making my mouth water…time to eat!!!

ReplyDeleteInstead of mayo you can use plain Greek Yogurt, like Chobani.
ReplyDeleteTo cook the chicken, just boil it in water until done. Looks like it's cooked in a standard cake pan, probably makes 6-8 servings.
This looks and sounds so delish!! WE are a dairy free household and I'm thinking I can make it dairy free :) I may mix cooked rice into it before cooking!! YUM!!

We get our freezer stocked 2 times a year by this wonderful company. The chicken breasts are way too big for one meal (there's only usually 2 of us) so into the freezer the leftovers go. Just perfect for a casserole!
I substituted some sour cream and cream cheese because I didn't have real mayo and was concerned with miracle whip.
Oh my my my it is heavenly!
Trying this out tonight... just a little tip, if you're lazy like me, you can buy a rotisserie chicken and skin it/shred it rather than separately preparing chicken.
ReplyDeleteThis recipe is similar to one I've been making for years. The recipe I have calls for curry powder and some lemon juice. I leave the chicken and broccoli in bite size pieces and stir with the soup mixture. The cheese goes on top. Yummy!!!
ReplyDeleteI have made this casserole for years, with a few additions, 1 T Curry powder, plus 1/2 C sour cream. We have always served it in Pepperidge Farm Patty Shells. We also call it "Chicken Curry". Always a hit, so easy to make ahead. I always make it when I have invited one of my children's boyfriends or girlfriends over, and we are meeting them for the first time. This dish helps me enjoy my company and I know this casserole is always a crowd pleaser!

ReplyDeleteI grew up on this, with the addition of curry powder and lemon juice to the "sauce". We always layered the ingredients- rice on the bottom, then broccoli, chicken and finally sauce on top. Sprinkle cheese over the top for the last five minutes of baking. This has been a family favorite for decades!

I didn't have broccoli. Hubs hated broccoli anyway. So I subbed cauliflower instead and omit the salt since I'm on salt-free diet and used a can of low salt cream of chicken soup as well. Hubs LOVED it so he had 2nds; my teen son had 3 helpings so it was earmarked to make again in the future. Hubs never liked or cared to eat but it was a first for him to tell me to make it again!
