I’ve never been one to shy away from a good casserole. Now, a casserole with Mexican flavors?! Fuggedaboudit. Everything about this casserole SCREAMS delicious! Lots of taste…lots of texture…NO leftovers ;)

Beef Taco Casserolé

1 lb. ground beef

1 can {16 oz.}refried beans {we used Rosarita}

1 jar salsa/picante sauce {we used Market Street}

1 pkg. Taco Seasoning

2 ½ cups tortilla chips, coarsely crushed

1 medium bell pepper, chopped

4 medium green onions, chopped

2 medium tomatoes, chopped

1 ½ cups shredded cheese {we used Colby & Monterrey Jack}

1 cup shredded lettuce

Brown meat and drain.  Return to skillet and add refried beans, salsa, and taco seasoning.  Heat to boiling and make sure to occasionally stir!

Coarsely crush your chips and place two cups on the bottom of a 2-qt. casserole dish.  I just eyed this measurement :)

Top evenly with the beef mixture and cover with onions, 1 cup of the tomatoes, and the shredded cheese.

Bake uncovered on 350 for 20-30 minutes or until the cheese is all hot and bubbly!

tacocasserole8 Now top with lettuce, remaining 1/2 cup of tomato, & half cup of chopped tortilla chips…OR,if you like a lotta crunch, add more!!!!  I did and it was AMAZING!!!!

Like I said, it was quick and easy, and there were NO leftovers!  I think red onions would be a pretty good addition, too…I’m definitely gonna add those next time!

  19. I made this last night for my family and some guests and we were literally scrapping the bottom of the casserole dish! Thank you for the awesome recipe and soooo easy. I loved your blog before but now I am obsessed with your cooking too! Yum!

  20. Looks great; can't wait to try it! BTW, what do you do with the bell pepper? Thanks :)

  21. I just made this and as we sat down to eat I was told this was the best smelling thing I had made in a long time. After my boyfriends second and a half (no he swears it was not a third) helping he said he would take this over tacos any day! Thanks for the recipe.

  22. Just started making this and like Bobbie, above, I can't find any explanation of what to do with the green bell pepper? Recipe calls for one med pepper, chopped ... but then never mentions when/how to incorporate it into the recipe ... can you please fill in the blanks? Should the pepper be cooked with the beef? Thanks!

  23. Made this one tonite and thought it was pretty good...I sprinkled the green pepper on top along with the lettuce...sorta reminds me of a glorified nacho...will definitely make again.

  24. I made this tonite and thought it was pretty good! I sprinkled the green pepper on top with the lettuce and remaining tomatoe.....sorta like a glorified nacho...will definitely make again
