I have a little dish I like to call comfort food. It just makes me feel all warm and fuzzy inside. I swear I ate this growing up, but I knew it as "Chicken A'la King" and we ate it on top of toast. Mom swears this is NOT the recipe!!! I don't know if I screwed up her version along the way and just fell in love with this? or if I just randomly threw some things together in a pot one day because it's all I had on hand. Whatever the case, this is one of my most FAVORITE.meals.EVER.
CHICKEN & RICE
2-3 chicken breasts, cooked & shredded
1/2 medium yellow onion, chopped
2 cans of cream of mushroom soup
3/4 can of milk {use a soup can to measure}
Salt & pepper to taste
Cook your chicken & shred.
Return to the pot and add the soup & milk. Depending on your preference for consistency, add as much or little milk as you want. I typically add about 3/4 of a soup can of milk because I like this to be nice and creamy...not too thick...not too runny. Just right :)
Stir in onions, salt, & pepper. I usually add in lots of pepper because it gives it a nice little kick! Return heat to low & simmer for about 15-20 minutes, stirring often.
Remove from heat & serve over rice.
Y'all. This is GOOD. And it's even BETTER the next day!!!
