Rachel Ray Would Be Proud

Trying to work full-time during the day & take care of the house/kids/husband at night is full of challenges, so I’m always looking for quick and easy meals that require lots of  LITTLE effort. We LOVE this recipe…mostly because it takes all of 30 minutes to make!  This is one of those make-it-when-you-haven’t-been-to-the-grocery-store-in-a-while kinda meals.  For whatever reason, we ALWAYS have these ingredients on hand.  It’s perfect for dinner or a weekend lunch :)

BUFFALO CHICKEN WRAPS

8 frozen breaded chicken breast strips/chicken tenders

1/4 cup mayo

1 tbsp. hot sauce {I use Frank's Original Red Hot Sauce…THE BEST!!!!}

4 large flour tortillas

Cheddar cheese, shredded

OPTIONAL TOPPINGS…

shredded lettuce

chopped tomato

Bake chicken as directed on package.  Meanwhile, mix mayo & hot sauce until blended.

Even though the recipe calls for 1/4 cup mayo & 1 tbsp. of hot sauce, we totally make it up as we go.  If we want it really spicy, we add more hot sauce.  The sauce is so yummy that we like to use it generously, so we’ll usually double what the recipe calls for :)

When the chicken is ready, cut it up into bite-sized pieces.  Spread the hot sauce/mayo mix on the tortilla & top with chicken.  If you’re not counting calories, drizzle some more sauce on the chicken ;)

Top with cheese, lettuce, & tomato.  All we had was cheese, but it’s really yummy with all the fixins’ too!!!  We like to nuke ours for about 12-15 seconds to let the cheese warm up & melt just a bit.

Rachel Ray would be so proud…this is definitely a delicious 30 minute meal!
