Keep Munching, We’ll Make More

Just incase you aren’t familiar, that’s a little Dorito’s slogan.  And if you haven’t figured it out by now, this is NOT going to be a healthy recipe post.  I love comfort food.  Hearty meals that don’t require a ton of work and require very few steps *might* be my favorite.  If you aren’t a fan of those kinda meals, stop reading now.  But if you like to treat yourself to something sinfully delicious every now and then, well then read on my friends.  Sometimes these are the best kind of meals and this one might be a new family favorite.  I’m sure this recipe has been around for a while, but it’s new to us.  Honestly, I can’t believe I didn’t know about this sooner.  When I pinned it on Pinterest, I was pretty skeptical.  Infact, I thought it looked a little scary.  I don’t know what made me decide to give it a shot, but I’m SO glad I did.  And once you try it, you’ll see why!!!!

 

DORITO CASSEROLE

recipe from Jam Hands

2 cups shredded chicken

1 1/2 – 2 cups shredded cheese {I used the Mexican 4 blend cheese}

1 can cream of chicken soup

1/2 cup milk

1/2 cup sour cream

1 can Rotel {I used HOT, but I’d recommend Mild if you’re cooking for kids}

1/2 packet taco seasoning

1 bag of Dorito’s {Nacho Cheese}

In a large bowl, combine all ingredients EXCEPT Dorito’s.

In a 9x13 baking dish, spread a layer of crushed Dorito’s on the bottom.

Now spread a layer of the chicken mixture on top of the Dorito’s.

Add another layer of crushed Dorito’s and then finish with another layer of chicken.  Top with shredded cheese and cover with foil.

Bake at 350 for 30-35 minutes or until bubbly.

Say what you will about this kinda food, but seriously people…don’t knock it ‘til ya try it!!!!

One of THE tasitest, easiest,  so-happy-to-be-home-from-work-and-not-sorry-about-cooking-something-too-time-consuming kind of meals.  This definitely ranks in our Top 10 all time comfort foods.

  1. My mom was so not a cook growing up, but this is her one dish she always made when we had company! We called it just Mexican Casserole and I loved it! It is pretty much the same recipe, but hers has cream of mushroom and when I was little I would start a fit because I didn't like mushroom and made her use two cream of chickens! Probably instead of the sour cream (if you wanted to make it healthier!) Thanks for sharing, I plan on making this again soon!

  5. Made it. Loved it. Want it again. I also grew up on a similar recipe called Mexican Chicken. Few differences - no taco seasoning, no sour cream but add cream of celery soup. Those are the only differences and both Mexican Chicken and this Dorito Casserole are to die for.

  12. I use a whole cup of sour cream and no milk as well as two packs of taco seasoning. So good!
