Have you ever gotten a recipe that was just too easy NOT to try?! That’s how I felt about this little number when my sweet grandma introduced me to it. Have y’all seen these little McCormick recipe inspiration packets!? Well, I hadn’t either!! My grandma raved about it and gave me a packet to try. Ummm…spices already portioned out…recipe on the back…SOLD. I immediately went to the store to pick up the remaining ingredients, came home, and whipped up one of the EASIEST dinners EVER!! And tasty, too!! If you haven’t tried these out just yet, you MUST try them soon!! They have lots of different recipe packets and they all sound DELICIOUS! Being the big tex-mex fan that I am, I’ll definitely be revisiting this one again, soon!
QUESADILLA CASSEROLE
1 packet McCormick’s Recipe Inspiration, Quesadilla Casserole {in the spice aisle!!}
1 lb. ground beef
1/2 cup chopped onion
2 {8 oz.} cans tomato sauce
1 {15 oz.} can black beans, drained & rinsed
1 {8 3/4 oz.} whole kernel corn, undrained
1 {4 1/2 oz.} chopped green chiles, undrained
6 flour {or corn} tortillas
2 cups shredded cheddar cheese
Just incase you need a little visual of these heavenly little recipe packets, here ya go. How convenient is that?! Pre-portioned spices and a recipe on the back?! LOVE IT!
Brown beef & onion in a large skillet and drain.
Now add tomato sauce, beans, corn, & green chiles. Mix well and add all the spice packets except red pepper. Bring to a boil, reduce heat, and simmer on low for about 5 minutes. Then go ‘head and add the red pepper, to your taste of course :)
Layer half of the beef mixture on the bottom of a greased 13x9 baking dish. Top with 3 tortillas, overlapping as needed. Now add half of the remaining beef mixture and top with a cup of cheese. Layer with 3 tortillas, overlapping as needed, and top it off with the remaining beef mixture and cheese. Bake on 350 for about 15 minutes or until heated through.
Now this is just DANG good!! If you’re a fan of EASY {and who isn’t?!?!} and you have an affinity for Mexican fare, then you must try this ASAP! Seriously folks, it’s TOO easy{and delicious!!!} NOT to try!!!!

ReplyDeleteThese McCormick spice packs are the best! I use them all the time, but I cheat and put the meat and spices all in the crockpot before work and cook it on low all day. :)
