I’ll Try Anything Once

I really will.  I LOVE trying new foods.  Every time I see a recipe that requires ingredient I'm not so sure about, I can hear DJ Lance Rock & the rest of the Yo Gabba Gabba crew singing, "TRY IT...YOU'LL LIKE IT!!!".  Dangit.  That's sorta how I felt when I found this recipe.  Mr. Spouse has been asking for fish tacos for a couple of weeks now.  I've been hesitant to say the least.  I love fish and I love tacos...but there are some things that don't sound like they should go together.  Well, thank you Mr. DJ Lance Rock because you & your crew must've made an impression on me.  I tried it...and I LOVED it!!!  If you're a fan of seafood, lime, and tacos, try this dish IMMEDIATELY!!! 

 

ZESTY LIME TACOS

1lb. tilapia, cod, or catfish {I used tilapia!}

2 tbsp. taco seasoning {I used Old El Paso, MEDIUM}

1 tbsp. butter

1 box crispy taco shells {we only used 6}

1 {6 oz.} container Greek yogurt, plain {I used Yoplait}

1/2 tsp. to 1 tsp. lime peel, grated

1 tsp. lime juice

1 tsp. sugar

1/4 tsp. salt

4 cups coleslaw mix

2 tbsp. fresh cilantro, chopped

1 jalapeno, chopped {& seeded!!}

1 medium tomato, seeded & diced

 

Now, I know that looks like A LOT of work, but it's SO not!!!  And it's SO very worth every little second of prep time!!! 

In a large bowl, mix yogurt, lime juice, lime peel, sugar, and salt.

Stir in coleslaw mix, jalapeno, and cilantro & let stand for about 5 minutes.

Meanwhile, sprinkle the fish filets with taco seasoning on both sides.  Spray your skillet with PAM & add butter.  Let the butter melt and add the fish filets.  Cook on each side for about 5-6 minutes or until flakey.

Meanwhile, heat taco shells according to package directions.  Remove fish from skillet and cut into small, bite-sized pieces.

Now it's time to stuff your taco!  Scoop in a layer of fish on the bottom and GENEROUSLY top it off with the coleslaw mix...SOOOO good!  Top that with tomatoes and VOILA!  Crispy fish tacos!

And just like Yo Gabba Gabba said, I tried it...and I LIKED it!!!  There was a SERIOUS party in my tummy...SO yummy, SO yummy!  I was honestly surprised that I liked it as much as I did.  Even as I was cooking, I was thinking to myself, "Fish tacos.  EPIC fail."  But I was pleasantly surprised at how much I LOVED 'em from FIRST bite!!  Mr. Spouse helped himself to 3 big tacos, right before I stuffed my face with 3 of the same.  I was worried that the taco seasoning would make these taste too taco flavored, but that was NOT the case at all.  It seasoned ‘em up just enough and gave it a little kick…but it was NOWHERE near the ballpark of taco flavored at all.  I seriously can’t say it enough…they were SO.DANG.GOOD!!!!

  2. Ironic, I was just searching for a Fish Taco recipe as my husband has also been relentlessly requested it. I'm gonna try it tonight!
