Double The Flavor

One of my favorite things about visiting my in-laws is snagging their AMAZING recipes! HA!!! I swear I gained a good 10 lbs. on our visit up north. It’s IMPOSSIBLE to stick to any kind of “diet” because the food is seriously TOO GOOD to pass up! It’s a neverending buffet of greatness :) I don’t know how we’ve gone the last 6 summers without having this salad, but my sister-in-law made this for us this last visit and I definitely ate enough to make up for lost time. I can tell ya right now that this little number will be making MANY appearances at our dinner table, family gatherings, and parties. YUM SCRUM!

BOBBI’S DOUBLE DRESSING PASTA SALAD

1 box penne pasta

1 brick Colby cheese, cubed

1 brick Muenster cheese, cubed

1 yellow pepper, chopped into large chunks

1 orange pepper, chopped into large chunks

Grape tomatoes, halved

1/2 bottle Ranch dressing {she used Ken’s}

1/2 bottle of Italian dressing {she used Ken’s}

Cut up all the veggies and cube the cheese. Add dressing to coat. Meanwhile, cook pasta according to directions.

Add pasta to veggies and dressing & toss. Refrigerate for 2-3 hours or until chilled. Remove from fridge and add a little more dressing to freshen things up. Serve & enjoy!

Not kidding, y’all…this is GOOD! This is one of those salads that just doesn’t get old! Even my littlest mister…who’s only 1…SHOVELED it into his mouth with a quickness. He couldn’t get enough!!! And Bobbi says you can use any kinda cheese you prefer…her favorites are Muenster & Colby :) And I gotta say, I wouldn’t have it any other way!

  1. YES, this is one of my favs! Easy to do and lasts up to a week! I will add more dressing as needed when the noodles seem to soak some of it up. Enjoy!!
