Paul Newman Is My Hero

My mom always made the best comfort food growing up. One of my favorites was her Chicken Cacciatore.  When she stayed with me after I had baby #2, she made it for us for dinner.  It was DElish!  Of course, in my drugged up post pregnancy state, I begged for the recipe.  I was sure it would be one of those keep-me-in-the-kitchen-all-night kinda recipes, but what she told me completely shocked the heck outta me!  These are the kind of recipes I LIVE for…fast, easy, and very FEW ingredients…and totally YUMMY!!!!  And seriously, it tastes like she spent hours on it.  Add this one to your list of things to try and you’ll be so glad you did!!!!

MOM’S EASY PEASY CHICKEN CACCIATORE

2-3 chicken breasts

1 {24 oz.} jar of Newman’s Own SOCKAROONI Sauce

Did you see that?!?!  TWO ingredients!!!!!  LOVE IT!!!!!!

Boil your chicken breasts, drain, shred, and return to the pan.

Open up the Sockarooni sauce and pour it over the chicken.  Stir until well mixed.  Cook on medium heat for about 10 minutes or until heated through.  Add salt to taste.

VOILA!!!  One of the best comfort foods EVER!!!!! 

Now, while this little concoction is pretty dang good on it’s own, the KEY to it’s tastiness is serving it over mashed potatoes.  That’s how it tastes the best…in my opinion, of course.  {Although it’s pretty tasty over rice, too.}  If you’re not a fan of making mashed potatoes {mine always turn out too runny or too lumpy}, pick up the Country Crock mashed potatoes…they’re pretty dang good and they taste *close* to the real deal without the flavor of the instant mashed potatoes from the box {YUCK!!!!}  Talk about a quick and easy meal!!!  IT doesn’t get any easier than that!!!!

My mom used to make this same dish the hard way.  She cut up all the peppers,

added the spices, tossed in tomato sauce & paste…yada, yada, yada…the whole

9 yards.  She said she about died when she found the Sockarooni sauce because

it tastes EXACTLY the same as how it did when she made it the long way.  Why

go through the extra steps when it just isn’t necessary?!  Thank the Lord for

shortcuts!!  There’s nothin’ this workin’ momma loves more!!!!

  1. I'm so trying that this weekend. I think it might be the "Yeah school is out" celebration dinner. I'm actually excited to go to the grocery store. Two ingredients? You are a girl after my own heart!

  4. I'm doing a similar thing tonight using chicken leg quarters and my crockpot! Love the two ingredients, couldn't be easier!
