I Stink At Making Crock Pot Meals!!!

I do!!!  I LOVE crock pot recipes, but I stink at preparing them!!!  I always forget to set out the ingredients before I leave for the gym in the morning.  Luckily, Mr. Spouse had a late night at work and I was able to get home in the afternoon and throw everything together for this meal before he got home!  This is SO easy peasy and AMAZINGLY DELICIOUS!!!  And it made my house smell so yummy!!  You gotta try it!
CROCK POT SALSA CHICKEN
1 lb. boneless, skinless chicken breasts
1 can cream of mushroom soup
1 cup salsa {I used Joe T. Garcia's}
1 pkg. taco seasoning {I used McCormick's}
1 cup sour cream
Place chicken, soup, and salsa in the crock pot.  Pour taco seasoning on top.

Cook on low for 6 hours, or if you're last minute like me, cook on high for 2-2 1/2 hours.  Pull the chicken out and shred and return to the crock pot.
salsachicken2 Stir in sour cream and heat until ingredients are combined. 
Now, I screwed up.  Shocker.  I mixed the soup, salsa, taco seasoning, & sour cream together and then poured it over the chicken and let everything cook for a couple of hours.  I clearly wasn't paying attention.  Anyway, it was still AMAZING and yummy, but it wasn't creamy enough to serve over rice {the recipe said to serve with rice}.  I'm thinking it might have been creamier if I added the sour cream last?!  I don't know, but I'd screw up the recipe on purpose again because it turned out great!!!!

  Instead of rice, I wrapped up the chicken in tortillas and served these as soft tacos.  Mr. Spouse was IN.LOVE and said we DEFINITELY have to make this again, SOON!  SO, if you decide to whip this up for dinner and follow the recipe the right way, let me know how it turns out!!!

  1. This sounds and looks delicious! I usually cook pork and beef in my crockpot, well basically because most of my crockpot recipes calls for it. But chicken now suddenly appeals to me, lol! I think tomorrow night we'll be having Crockpot Salsa Chicken. Thanks for sharing!

  2. This recipe sounds so yummy and easy! I am going to give it a whirl...I just have to be sneaky with getting the sour cream in there because my husband thinks anything with sour cream is gross...little does he know he does eat it sometimes and that is what makes everything better! I always look forward to trying your recipes! Thanks for sharing!

  3. i may actually try this tonight. i just have to send hubs to the store to get sour cream. this sounds like the perfect recipe for us. i just have to toss everything into the crockpot, and we could eat mexican style food 3 meals a day.

  4. I made this the outher night and we all loved it! My 4 year old even got excited about eating leftovers the next evening. He says it is just like Chipolte, one of his favorites.

  7. This recipe is awesome and one of my family's favorites! We like to serve it with rice. Instead of salsa I use pico! Yum!

  8. I've made this twice and it's delicious! Instead of sour cream I used plain Greek yogurt and I also added some corn about an hour before it was done cooking. The first time I followed the original instructions and added my Greek yougurt when I shredded the chicken. ( a helpful hint is to use a hand mixer to shred everything...save so much time and is so much easier!) the second time I made this I didn't pay attention to the instructions and added the Greek yogurt (instead of sour cream) with all the other ingredients and I think it turned out much better. Love love love this recipe!
