Fiesta Chicken & Memories

Do you ever eat something that takes you back??  Y’know, eating something that reminds you of someone, something, or a feeling of some sort?!  Well, that’s what this recipe does for me!  It totally reminds me of our first house.  We used to eat this ALL.THE.TIME. when we first got married.  Seriously, I’m thinkin’ we probably ate it once a week.  This was one of those recipes that my sweet Grandma Kay found in a magazine or paper & then mailed to me…probably because she thought this was TOO easy for me to screw up!!  When I made this for dinner the other night, the first thing Mr. Spouse said was, “this reminds me of the old house.”  And I LOVE that.

Fiesta Chicken

2 chicken boneless, skinless chicken breasts {uncooked}

1 can of Fiesta Corn

1 –1 1/2 cup{s} Salsa/Picante Sauce

Cheese

***TeamCarroll4 version:  We like to use the MILD Pace Picante sauce & monterry/jack cheese.  Y-U-M***

Preheat oven to 400.  Take 2 pieces of foil and place one chicken breast on each piece.  Evenly divide the salsa/picante sauce and pour on top of the chicken.  {You can probably tell that this a little more than a cup of salsa.  Ummmm…yeah.  We just sorta eyeball it now and sometimes we get a little pour happy :)fiestachicken1

Divide the can of fiesta corn {evenly} and pour on top of salsa/picante sauce.

Fold the foil over the chicken/salsa/corn & close the edges tightly!  Be sure to place the foil pockets on a cookie sheet because it will definitely leak while cooking!!!

Bake at 400 degrees for 18-20 minutes and remove.  Don’t forget to cut into your chicken to make sure there’s NO more pink!!  Does this look yum or what?!

Remove chicken/salsa/corn from foil and top with cheese.  WHOA.  I got a little pour happy with the cheese, too.  I usually nuke it for about 30 seconds to let the cheese melt.   I’m sure a little sour cream on top would be D-lish.  It’s really good with flour tortillas, too!!
