Am I the only one who grew up eating either cheese pizza or McDonald’s fish sandwiches on Friday nights during Lent?! Now that I’m all grown up, I love making “non-meat” dishes no matter what the season! BUT, I especially appreciate these recipes during Lent. This recipe is one of my FAVORITES!! My Daddy makes these and they are D-lish!! I wish this one would’ve been on our Friday night Lent menus growing up!!! Happy Lenten Season!
CRAWFISH PO’ BOYS
1 pkg. frozen crawfish tails
1 stick of butter
1 green bell pepper, chopped
1 small yellow onion, chopped
2 celery stalks, chopped
1 loaf French Bread
Shredded cheddar cheese
Cajun Seasoning, to taste {I use Tony Chachere’s}
Melt butter in a large saucepan and throw in chopped veggies.
Saute veggies for about 5 minutes and add crawfish tails.
Stir & mix evenly. Sprinkle on some Tony’s & cover with lid. {I usually sprinkle in a little to start with and then I let it all saute for about 10-15 minutes. Then I have myself a little taste test to see if I need to add anymore and saute for about 5 more minutes.}
Meanwhile, slice your French Bread so that you have a top & a bottom, and place on top of a large sheet of foil. {You’ll need enough so that it will fold over & cover the loaf.} Now, remove the “meat” of the bread on the bottom portion of the loaf. I use all the leftover bread to dip in the crawfish for my “taste tests” :)
Fill the hallowed out portion of bread with cheese and top with crawfish…and another layer of cheese. By now I’m sure you can tell that I haven’t given up butter, carbs, or dairy for Lent this year. Are you swooning yet?!
Cover with the top portion of the loaf and wrap with foil. Place on baking sheet & bake for 30 minutes at 350.
Remove from oven and cut into thick slices. Can you say to-die-for?!?!!
Seriously…this is SOOOOOO good!!!!! We’ve served these at parties and they go over great! There’s never any left!!!! When Daddy makes these, he uses half a stick of butter & only green pepper…no other veggies…and they’re JUST as good!
