As much as I DON’T love cold weather, I DO love cold weather food…mainly, SOUP! I LOVE soup!! I’ll eat soup any time of the year, but I think it tastes SO much better when it’s cold outside! I tried out a new soup recipe the other night and it was a hit :) I always know when I’ve struck gold if Mr. Spouse goes back for 2nds…and then 3rds…and then eats the leftovers the next day. If you’re lookin’ for a D-lish {& ridiculously easy} soup recipe, you’ve gotta try this!!!
CHICKEN TORTILLA SOUP
1 can chicken broth
1 can cream of chicken soup
2 tbsp taco seasoning
1 can diced tomatoes
1 can black beans
1 can whole kernel corn
1 can diced green chiles
3-4 chicken breasts, cooked & shredded
***Team Carroll version: we use rotisserie chicken because it’s SO much easier and SO much faster!! Plus, the rotisserie chicken is a lot more flavorful!! We also use monterey jack & colby cheese for topping when it’s ready to be served and we eat it with the Mission style round tortilla chips…M-m-m-m-m.***
Combine chicken broth, cream of chicken, & taco seasoning in a pot on medium heat {stovetop} & whisk together until blended.
Shred your chicken. This was our little guy…
Add chicken to the broth/soup/seasoning mixture & stir.
Add tomatoes, beans, corn, & chiles.
Mix well & keep on on medium heat for 20-25 minutes, stirring often. When it’s all ready to eat, top with cheese & serve with tortilla chips. We crumbled some in our soup and it was D-lish!!!! I bet it would be yummy topped with a little sour cream, too. I’m just sayin’…
Yum! That looks so good and tortilla soup (really most soups, stews and chilis) has been my number one prego craving this time :) We will be making this soup this weekend FOR SURE!!

ReplyDeleteOh my...this is delicious! I made a batch at lunchtime today and am on my second helping! I made a few modifications/assumptions below:
ReplyDelete--did not add any water to the cream-o-chicken soup but added a little more chicken broth
--drained the seasoned black beans (but not rinsed)
--used Rotel with green chile's
--used corn with peppers
--added 1/4 cup chopped onion
--served with green onion,shred cheese, and sour cream
LOVE this!!
Just made this tonight and passed some on to a neighbor! It was awesome..So easy and delishous. I will be adding this to my repretuar for sure:-)

ReplyDeleteIs there anything to use such as tomato sauce instead of diced tomatoes? My boyfriend refuses to eat anything that has pieces of tomatoes he can see. Very frustrating.

DeleteTried this over the weekend. It was absolutely wonderful. I used two cans regular Rotel in lieu of the separate cans of diced tomatoes and green chiles. My husband ate the majority of it. The Rotisserie chicken was a great idea as well. Thanks for sharing.

ReplyDeleteI made this for dinner last night and was disappointed. I absolutely should have drained the beans - the overpowered all of the other ingredients. If you need more liquid I would suggest using another can of cream of chicken and broth. I will give it another shot - with the beans DRAINED!
ReplyDeleteDefinitely drain your beans and rinse them. Going to make this in the slow cooker tomorrow and add more chicken broth. Love the idea of taco seasoning for flavor.
