My boys LOVE ‘em some s’mores. My oldest affectionately calls them “some mores”. Kinda precious…and pretty fitting, too. I mean, after I eat one, I always want some more!! Here’s a fun little recipe I found and made for the family when they were in town. We scarfed ‘em down in NO time and everyone was begging for SOME MORE!!!!
S’MORES COOKIE BARS
1 stick of butter, room temp.
1/4 cup brown sugar
1/2 cup sugar
1 large egg
1 tsp. vanilla extract
1 1/3 cups flour
3/4 cups graham cracker crumbs {about 1 sleeve of crackers crushed}
1 tsp. baking powder
1/4 tsp. salt
2 king size Hershey’s bars
1 1/2 cups marshmallow crème/fluff {the entire small jar…7 oz., I think}
In a large bowl, cream together butter & sugar until light. You’ll need to make sure your butter is at room temperature for this step, otherwise you’ll have a heck of a hot little crumbly mess. That may or may not have happened to me…just sayin’. Now beat in the egg & vanilla.
Crush your graham crackers real quick. I like to leave mine in the package so I don’t waste a perfectly good Ziplock baggie.
In a separate bowl, whisk together flour, graham cracker crumbs, baking powder, and salt. Now pour that into the butter mix in the other bowl and mix on low until combined.
Now divide the dough mix in half and evenly spread one half in a greased 8x8 baking dish. This will be your crust.
Place the two King sized Hershey’s bars on top of the crust. Don’t confuse the King size bars with the GINORMOUS Hershey’s bars. I had NO clue that Hershey’s has a baby bear, momma bear, and papa bear version of these. You want the mama bear version. I have NO clue what the heck you’d do with the papa bear bar…gosh DANG, those things are HUGE!!!
Spread the marshmallow crème on top of the chocolate. Don’t measure this one out and dirty up a perfectly clean measuring spoon. Just use the entire small jar {7 oz., I think} of marshmallow crème and that’ll be just enough!
Now take the rest of the dough and spread an even layer on top of the marshmallow crème. You might wanna flatten out the dough and spread it out in small pieces, overlapping if needed. Otherwise this step will get a little tricky as evidenced in the pic below. I did not heed my own advice and just started tossin’ it on. Dangit. But I swear that what it lacked in appearance it made up for in taste.
Now bake at 350 for 30-35 minutes or until lightly browned.

I’d recommend a tall glass of milk to accompany this decadent dessert. For reals. Give it about 10-15 minutes to cool down and then throw all caution to the wind and dig right the heck in. We were eating them so fast that I forgot to snap a little pic. So here we are at the bottom of the batch…
