I found this recipe a while back and printed it out with the intentions of making it that night. Well, I guess I didn't get around to it and somewhere along the way I lost the recipe and couldn't remember where I even found the original! I guess I must have used it as a bookmark when I was reading my latest issue of US magazine because that's where I found it a few weeks later! HA!!! I wish I knew who to give credit to for this recipe, but for the life of me I can't remember where I found it. They said it would be good, but that was an understatement...these enchiladas are TO DIE FOR!!!!!!!!!!
TO-DIE-FOR CREAM CHEESE CHICKEN ENCHILADAS
2-3 chicken breasts, shredded {OR rotisserie chicken}
1 {8 oz.} pkg. cream cheese
1 28 oz. can green enchilada sauce {I used Las Palmas}
1 can black beans, drained & rinsed
2 cups cooked rice {I used boil in a bag because I can't cook rice to save my life!!!}
Tortillas {I used Mission flour tortillas, but homemade would be muy delicioso!}
1-2 cups shredded monterrey & colby cheese
Cook chicken and shred; boil rice. Mix the shredded chicken, cream cheese, and 2 cups of the enchilada sauce together. This mix makes A TON!!!!
Pour half a cup of the enchilada sauce into the bottom of a 9x13 baking dish.
Layer the rice & black beans to your taste…
and top with the chicken mixture in each tortilla.
Roll up each of the tortillas and place them in the baking dish seam side down.
Top with 1 cup of the enchilada sauce…
and 1-2 cups of shredded cheese. The more, the merrier so we piled on the full two cups :)
Cover the baking dish with foil and bake at 375 for about 25 minutes.
Uncover the enchiladas, turn on the broiler, and broil for about 3-5 minutes uncovered...just long enough to brown the cheese. Swoon.
Y'all...these are honest to goodness downright AMAZING!!!! I could eat these every night and be happy as a clam! SO good!!! Like I said before, this mixture makes A LOT of enchiladas. These would be GREAT to serve if you were having a dinner party or bringing dinner to someone. If you do decide to make these for a dinner party, pick up an extra can of the enchilada sauce to spread on the baking pan & on top of the enchiladas with each batch you bake.
RUN to your nearest grocery store and pick these ingredients up as soon as you can!!!

I made this recipe last night. You are right, it was killer!! I accidentally bought a 10 ounce can of green enchilada sauce, so I had to add a can of diced green chiles. It was awesome! I had written out the recipe instead of pulling it up on my laptop while cooking. After I put the sauce in the pan, I accidentally layered the rice and beans on top of that then rolled the chicken mixture into my tortillas and layed those on top. You know what? It was delicious that way!

I was wondering the weight of chicken to use with this recipe. You call for 2-3 chicken breast. Assuming you mean 4-6oz per breast do you think roughly 1 pound would work? :)

I made a few alterations just so I didn't have to go to the store...I thought I'd share them in case anyone would like to be creative:) First, I had some canned chicken that a friend had given me that she canned herself so I used that. (already cooked all I did was shred it, how easy!)Next, I love flour tortillas for enchiladas and corn for a few taco recipes I have and decided to try both in this recipe. I don't know which I liked better! Both were amazing! Then, I'm trying to get my family to eat more brown rice, but it "looks" different, so anytime I can disguise it in say an enchilada, I take every liberty in doing so! I used half white half brown, no one was the wiser! The only thing I will try to do next time is I think the rice needs a little flavor, I'll come up with something to season that next time. My family of picky eaters ate it up! A sure Success at the dinner table last night! Hooray!!

DeleteOMG These enchiladas were UH-MAZING!!! Cooked them for my mom and my boyfriend and they were a total hit! I made these two days in a row, they were that good, the second time I mixed the beans and rice with the chicken mix instead of just layering the chicken mix on top of the rice and beans. It seemed to turn out better that way. Thanks for the great recipe! I'll be trying more soon!

ReplyDeleteI have made this with ground beef and its super yummy! When I am making my rice I usually saute it in a few tablespoons of butter and when the rice starts to get a bit of color i squeeze the juice of a lime over it and then cook as called for. It is so good! I really like using ground beef in this recipe with corn tortillas. Yummy.

ReplyDeleteI made these tonight...awesome! My whole family ate them up. I made a few alterations. I don't like green enchilada sauce, so I used mild red enchilada sauce. Also we don't care for beans so I just left them out. I cooked the chicken in the crock pot with water and a packet of taco seasoning, then used my kitchenaid mixer to quickly shred the chicken. I then used some of the liquid from the chicken to cook the rice. It was flavorful and creamy! Yumm!

ReplyDeleteWe now have these at least twice a month. It does make a lot so I make personal frozen entrees with the extras or make second batch and freeze - without the cheese on top. My kids aren't a fan of black beans, despite my coaxing, so I leave those out and I use corn tortillas to accommodate my gluten intolerant tummy. I love the green enchilada sauce, but kids don't so I put more on the inside than on the outside and it blends in better. I think it's the color based on their comments. They don't seem to mind the taste.

DeleteMade these last night and added some steamed spinach. We used corn tortillas, brown rice and rotisserie chicken. I ran out of verde sauce, so poured red enchilada sauce over the top. Whole family enjoyed these.

I did the chicken in my mixer with the paddle which was sooo helpful but then added the cream cheese and sauce, by the time I stirred it into the chicken it was waay too fine so next time I'll 'shred' it less in the mixer and mix the cream cheese and enchilada sauce seperate til its smooth before I add it to the chicken. I did 4 big breasts too so I needed 2 cans of beans 3 cups of rice and more ench sauce and both cheese. It made tons!

ReplyDeleteI'm a tex-mex feign, so I might be a little particular, or maybe I wasn't liberal enough with the chilada sauce. Anyway, we added a little salsa on top for extra spice, or next time I might try some taco seasoning to the chicken mixture for some extra zing. Loved the creamy richness of these, though, and they were super easy. Also lov how it pretty much made a double batch so I could save one in the freezer for later!

ReplyDeleteThis made a HUGE amount of food - enough to freeze for a second meal. It was sooooo delicious, though! The only change I made was substituting a can of diced chils for the jalapeno so I didn't have to go to the store. This week, I made the full batch and mixed all the ingredients in one bowl. Then I used that mixture in large burrito tortillas and wrapped them individually for the freezer. I now have a freezer full of yummy burritos to keep me from going through the drive-thru on busy nights. Yum!

ReplyDeleteThese are amazing! They truly make a ton!!! I made these one night, while feeling adventurous, and fried the leftover tortillas, sprinkled with cinnamon-sugar, and topped with ice cream! My husband is allergic to beans, so I couldn't add them, but they were still really good!
